Corn Potato Crostini/ Potato Open Toast




This is a modified version of Aloo-Chutney Sandwich. I thought to make it from Baguette. I made an open toast aka crostini. This is a Potato corn Crostini recipe. A very simple recipe we have been making it for years. I have used homemade fresh Coriander Chutney with garlic in it. Tip- Do not use Chutney which has coconut in it. It won’t taste good.
This is a party appetizer. I usually serve it in parties.
So give it a try. All you need is-

INGREDIENTS-                                                SERVINGS- 8 slices
1 boiled potato
¼ cup Boiled Corns
¼ cup sliced Onions
8 cherry tomatoes, sliced
1/8th tsp salt
1/4th tsp chat masala
¼ cup mayonnaise
Butter
1 Baguette
2 tbsp Coriander Chutney
4 cheese slices or you can take more

METHOD-
1.    Slice the Baguette. Apply butter over each slice.
2.    Now for the topping. In a bowl mash boiled potatoes.
3.    Add boiled sweet corns, sliced onion and coriander chutney. Mix everything together.
4.    Lastly, add salt and chat masala. Give it a final mix.
5.    Apply this potato topping over each Baguette slice.
6.    Over it spread mayonnaise.
7.    Top it up with slices of tomato and cheese.
8.    Bake these crostini at 200 degree Celsius for 15 minutes.
9.    After 15 minutes crostini’s are ready to serve.

Tip- you can use any cheese of your choice and instead of mayonnaise you can use mint yoghurt.

Pepper Bruschetta




Traditionally Bruschetta is made using tomatoes. I have used Bell Peppers in this version. Quite a simple recipe. It is again a delicious appetizer for a party. You’ve got to try this.
INGREDIENTS:
2 Baguettes
2 Tbsp Butter
¼ cup Mozzarella
1 Tbsp Olive Oil
1 Tsp crushed Garlic
½ cup mix Bell Peppers [Red, yellow and green], chopped
½ cup Cherry tomatoes, diced
¼ cup Cheddar Cheese
1 Tbsp Oregano
½ Tsp Black pepper, crushed
¼ Tsp Chili Flakes
¼ Tsp Salt

METHOD:
1.    Slice the Baguettes. Make sure slices should be little thick.
2.    Apply butter to each slice.
3.    Grill the slices in the oven. Or Bake it at 200 deg Cel for 10 mins.
4.    The bread should get crispy. Once it is toasted remove it from the oven and keep it aside.
5.    Meanwhile, in a bowl add peppers, crushed garlic, tomatoes, salt, black pepper powder, oregano, chili flakes, olive oil and cheddar cheese.
6.    Mix everything well. The topping is ready.
7.    Place a spoonful of topping over each bread slice.
8.    Lastly put some mozzarella cheese over it.
9.    Bake all the bread slices at 200 deg Cel for 10 minutes or until the cheese melts.

10.                      Once the slices are baked, remove it from the oven and serve it.

Serve along with a nice wine. And make your party a bit hit!
