Onion-Cabbage Thalipeeth




Thalipeeth comes from Maharashtra. A traditional breakfast recipe made using 3 types of flour (Wheat flour, Jowar flour and Gram flour). It is a kind of pancake. You can add loads of vegetables for taste and health. You get Thalipeeth Flour very easily in any supermakerts these days. It is called as Bhajani in Marathi.
My Grandmother has her own Bhajani recipe. She mixes 4-5 grains like, wheat, Jowar, Bajra, Rice and Chana Dal. Then to it she adds Roasted cumin, Coriander seeds and asafetida. It tastes heavenly.
So today I have cabbage in my refrigerator and onions so I am making Cabbage onion Thalipeeth. You can make thalipeeth with various combinations- cucumber, onion, meethi, spinach, carrot etc.
It is served with a huge dollop of white butter (Makkan/loni) and coriander chutney. (You can check Chutney Recipe in Recipe Treasure).


For Thalipeeth we need-
½ cup each Wheat Flour, Jowar Flour and Bajra Flour
2 tbsp Gram Flour (Besan)
1 tbsp White sesame
1 tsp ginger garlic paste
1 tbsp green chilies, chopped
¼ cup coriander, chopped
½ cup onions, finely chopped
½ cup cabbage, grated or chopped
2 tsp salt
1 tsp red chili powder
1 tbsp oil
1 tsp turmeric powder
Some more oil/ ghee for grilling 

 Method:-
1.  In a deep mixing bowl add onions, cabbage, green chili, coriander, ginger garlic paste, sesame seeds, salt, turmeric and red chili powder. Mix everything well. And allow it to rest for 15 minutes.
2.  After 15-20 minutes onions-cabbage gets soft and water comes out. To this add oil and all the flours.
3.  Mix it nicely, then add little warm water and knead it into a soft dough.
4.  Allow the dough to rest for 5 -6 minutes.
5.  Meanwhile heat a Tawa or a non stick pan, grease it with oil.
6.  Make small balls of the dough and roll it on a greasing paper. Do not roll it too thin.
7.  Gently transfer the thalipeeth on tawa. Make a small cavity in between and cover it with lid and allow it to cook on low flame for 4-5 minutes.
8.  Now remove the lid, drizzle some ghee/ oil from the corners and flip the thalipeeth.
9.  Grill it from another side.
10.             Thalipeeth is ready to serve.
11.             Serve it green chutney and a glass of spiced buttermilk.
