KHAMANG KAKADI / NUTTY CUCUMBER SALAD

We think salads are extremely healthy. And yes it’s true! But only when made using correct ingredients. This is a old grandma salad recipe-KHAMANG KAKADI. A very simple, healthy and tasty recipe made using cucumber with very little tempering of asafetida (heeng) over it. The hint of fresh green chili, the crunch of peanuts adds more flavor to it. Try this simple Koshimbeer/ Salad recipe-

INGREDIENTS:-
2 cucumber wash, peel
1 green chili
1 teaspoon oil (prefer using Olive oil)
¼ teaspoon asafetida (heeng)
½ teaspoon  sugar
1 teaspoon lemon juice
2 tablespoon groundnut powder (you can replace it with Almond, Cashew or Walnut powder for kids)
¼ teaspoon turmeric
¼ teaspoon Mustard seeds
METHOD:-
1.  Grate cucumber with a big grater.
2.  Squeeze extra water out of it.
3.  Add salt, sugar, peanut powder and lemon juice.
4.  To give hint of chili add half chili to grated cucumber.
5.  For tempering:- heat oil in a pan
6.  Add mustard seeds allow it to crackle
7.  Add asafetida, turmeric and the remaining chili.
8.  Pour this tempering over grated cucumber.
9.  Mix everything well and serve it.

TIPS:-
·       You can have it daily. With Roti- Sabji, Dal-rice or even with Parathas
·       Make just before serving.
·       Remove excess water from cucumber after grating.
