PAATAL BHAJI / ARVI KA SAAG

Paatal Bhaji is a star dish of Mahashtrian cooking. This is made on all festivals and is loved by everyone.
This can be made using Colocassia Leaves or Spinach or even with Fenugreek leaves. In this recipe we have used Colocassia leaves (Arvi k patte). These leaves are used widely in Gujarati and Maharahtrian Cooking, it is not only flavorful but has nutritional health benefits. Colocassia leaves are excellent source of iron, folic acid, calcium and fibre. They are very beneficial for expecting mothers and also good for kids growth. Try this HEALTHY RECIPE FOR HEALTHY LIVING and enjoy it with Phulka or hot steam rice.

INGREDIENTS:-
2 ½ - 3 cups Chopped Colocassia (Arvi k patte)
2 tablespoon Chana Dal (split Bengal gram)
2 tablespoon Peanuts
Few pieces of cocnut
2 tablespoon or ¼ cup Besan
1 tablespoon Tamarind paste( imli ki paste)
2 tablespoon Jaggery
FOR TEMPERING:-
3 tablespoon Oil
1 teaspoon Mustard Seeds
¼ teaspoon Asafetida (heeng) or little more
½ teaspoon turmeric
1 teaspoon red chili powder
1 teaspoon salt
 METHOD:-
1.  Soak chana dal, peanuts and coconut for 2 hours.
2.  In a broad pan boil 1 litre water , add soaked ingredients(step1) and boil it for 5-6 minutes or till the Dal gets soft.
3.  Once dal gets soft, add chopped Colocassia leaves (Arvi k Patte) and boil for 10 minutes till leaves gets cooked. This will take almost 7-8 minutes.
4.  Meanwhile in a bowl add Besan, Tamarind Puree and make a batter using little water.
5.  Add this batter to cooked leaves and stir in continuously.
6.  Add salt, mix it and again cook for 4-5 minutes.
7.  FOR TEMPERING:- heat oil in a pan
8.  Add mustard seeds, asafetida, turmeric and red chili powder.
9.  Now pour this tempering (tadka) over the cooked Bhaji , mix it well cook for another 2-3 minutes on high flame.

10.             Enjoy it with nice hot steam rice with generous amount of ghee over it.
