SWEET TANGY TOMATO CHUTNEY

Chutney are very commonly made in every Indian home and there are many varieties of chutnies. One such is a Sweet-Tangy Tomato Chutney. This goes well with any kind of parathas.
Let’s see how to make it.

INGREDIENTS:-
2 big Tomatoes, diced
1 big onion, finely chopped
1 1/2 tablespoon Oil
½ teaspoon mustard seeds
1 teaspoon Cumin
¼ teaspoon asafetida (hing)
½ teaspoon Fennel
¼ teaspoon Turmeric
½ teaspoon Red chili powder
1 tablespoon Coriander Powder
1 teaspoon Garlic paste
1 ½ or 2 tablespoon Jaggery
¼ teaspoon Salt or as per taste.

METHOD:-
1.  Heat Oil in a pan, add cumin, mustard seeds, fennel and  asafetida.
2.  Allow it to crackle.
3.  Add onions and cook it till it get’s soft. Do not caramelize it.
4.  Once onions gets soft add garlic paste, sauté it
5.  Add turmeric, coriander powder, red chili powder and garam masala mix everything well.
6.  Add diced tomatoes mix it and cover it with lid for 5 minutes.
7.  After 5 minutes remove the lid and you can see water coming out of tomato.
8.  Add jaggery mix it, again cover it with lid and cook for 2 minutes.
9.  Remove the lid allow the water to reduce.
10.             And chutney is ready to serve.
Serve it with Aloo Paratha or any kind of Parathas.
