Stuff Aloo Paratha

Aloo Paratha is a very popular breakfast especially in North India and is loved by everyone all over the India.
Traditionally this stuff Indian bread is shallow fried using loads of Ghee or white Butter and is served typically with fresh curd or Tomato Chutney.
Let’s see the preparation- (Here we are using oil you can replace oil with Ghee)
Ingredients:-
FOR STUFFING-                                                   Makes:-6 Parathas
3-4 Medium sized Potatoes- boiled, peeled and mashed
1 big onion finely chopped
2 green chilies
7-8 cloves of garlic
1 tablespoon oil
½ teaspoon Mustard seeds
½ teaspoon Cumin
½ teaspoon Fennel
½ teaspoon turmeric
1 tablespoon coriander powder
½ teaspoon garam masala
½ teaspoon salt
FOR DOUGH-
1 ½ cup Wheat Flour
½ teaspoon Oil
Pinch of salt
Water as per needed.
Butter for serving.

Method:-
1.  Firstly knead the dough and allow it to rest till you prepare the stuffing-
For dough in a bowl add wheat flour, salt and oil mix it. Now with the help of little water knead the dough.
Add water in very small quantities or as per the requirement.
2.  Apply little oil over the kneaded dough, cover it and keep it aside.
3.  for stuffing- heat oil in a pan
4.  Add mustard seeds, cumin and fennel, allow it to crackle.
5.  Add chopped onion and sauté’ till onions get cooked.
6.  Meanwhile, in a pestle-mortar grind chili and garlic.
7.  Add this freshly grinded chili garlic paste to onions and sauté’ it.
8.  Time to add turmeric, coriander powder and garam masala. Give it a nice mix
9.  Add mashed potatoes and salt. Cook it on a medium flame for 2-3 minutes
10.             Now remove it from flame, allow it to cool and divide this aloo masala in 6 equal portions.
11.             Divide dough also into 6 equal portions.
12.             Now stuff the aloo masala in dough properly. Make a small pattie.
13.             Coat this stuff pattie in dry wheat flour and roll it into circle.
14.             Do not press it too much, keep it little thick
15.             Place this rolled paratha on a hot Tava and cook over a medium flame.
16.             Once tiny bubble starts to rise flip it, apply very little oil/ghee and press it using spatula.
17.             After 30-40 seconds flip it again, apply very little oil/ghee spread it using  spatula cook it for another 30 seconds on a low flame and flip it again
18.             Repeat this flip and press process till you get brown bubbles over the paratha.
19.             Once paratha is cooked. Transfer it to a plate add butter over it.
20.             And serve it with Tomato Chutney or Curd.
