PASTA SALAD using CHIPOTLE SOUTHWEST DRESSING


There’s another thing which came out of kitchen cabinet. This is CHIPOTLE SOUTHWEST DRESSING. Chipotle is smoked dried jalapeno. This chili comes from Mexico. It has an amazing taste. The base of this sauce is Mayonnaise. Then it has Chipotle, onion powder, garlic powder and some dried herbs.
Chipotle gives a nice hint of chili to it. This pepper has it’s own flavor.
 Chilies have CAPSAICIN. It is an oil which makes chilies hot. So every chili has a CAPSAICIN LEVEL.  And chiles hotness is measured in Scoville units. There are many varieties of Chilies. Hotness of Jalapeno lies between 2500-5000 Scoville units.
Chilies are an excellent source of BETA CAROTENE and VITAMIN C. 
FRESH JALAPENO
Jalapeno, which we are using in this sauce are tapered green or red chilies and are sold fresh, canned or pickled. 
Let’s see the use of this Chipotle Southwest Dressing-

INGREDIENTS:-
1 tablespoon Chipotle Southwest Dressing
1 teaspoon fresh cream
½ teaspoon crushed black pepper
1 tablespoon Olive Oil
1 teaspoon Lemon Juice (you can even add apple cider or balsamic vinegar)
Pinch of dried herbs
1 cup of boiled Pasta
2 cups mix Diced Vegetables- carrots, cucumbers, onions, tomatoes and lettuce.
Add ½ teaspoon of crushed garlic
½ cup Bread Croutons (toasted bread pieces)

METHOD:-
1. In a bowl add Chipotle Southwest Dressing, fresh cream, black pepper, oil and lemon juice.
2. Mix it well. Add dried herbs. And again give it a nice mix.
3. Add boiled pasta, vegetables and mix it.
4. At last add bread croutons.
5. Before serving refrigerate for 25-30 minutes.

This is a perfect salad to serve in parties. Do try this recipe.
