Cucumber Thalipeeth

Thalipeeth is a traditional Maharashtrian breakfast recipe. One such recipe that has been handed down since generations.  For this we use Roasted Multigrain Flour aka “ Bhajani”.  You can make it with simple wheat flour also. It is made by adding onions/cucumber/carrot/fenugreek etc. Here is a recipe of CUCUMBER THALIPEETH made using wheat flour.
Ingredients-
1 cucumber
1 cup wheat flour
1 teaspoon cumin
4-5 garlic cloves
2-3 green chilies
2 tablespoon sesame seeds
½ teaspoon turmeric
¼ teaspoon red chili powder
Salt to taste (approximately ½ teaspoon)
1 tablespoon oil

Process-
1.  Wash and peel cucumber.
2.  Grate it, add salt in it and keep it aside for 10 minutes.
3.  Salt helps cucumber to get soft.
4.  Meanwhile, in a pestle-mortar add garlic & chili. Coarsely grind it. You can add very little salt & cumin while grinding.
5.  Now add garlic-chili paste to grated cucumber.
6.  Add turmeric, sesame, red chili powder and mix it well.
7.  Keep it aside for 5-10 minutes.
8.  Now add flour to the cucumber mix.
9.  You may need little water. Add water and mix it.
10.             Dough should be soggy.
11.             Now heat a tawa, add little oil and spread the thalipeeth mixture.
12.             Spread it with your fingers.
13.             You may need little water to spread it.
14.             Cover it with lid for 2-3 minutes.
15.             Remove the lid, spread little oil (a few drops)
16.             Flip it, fry it from both sides.
17.             Thalipeeth is ready!

Serve it with green chutney Or Dahi with dollop of white butter (Makhhan) over it.
