A Sweet Encounter with Almonds

Ever  since childhood we all have heard about benefits of Almonds. It was a daily routine that every morning Mama used to make us eat soaked Almonds. (Thinking that we'll score good in exams). It was her routine that she used to soak almonds overnight, and made us eat in the morning. As kids we never liked the taste of soaked Almonds and there's still a kid hidden inside us which refuses to eat soaked almonds even today. But seriously yes, almonds have great benefits if consumed in a correct way and proportion. Despite of being high in Fat and Calories, Almonds are rich source of vitamin E, potassium and protein. They are a fantastic source of Antioxidants as well. However, they are not limited to kitchen but are used in many cosmetic products such as Oil, Soaps, lotions etc to make skin look bright, young and smooth.
Since here we talk about food and only food let's see how and where can we use this- "perfect taste changer ingredient."
(We can use it in gravies, sweets and even for making snacks.)
Here is a recipe of-
 “Kesar-Almond Kulfi”

Ingredients- 
2 litres of milk
400gm condensed milk
10-15 Almonds toasted
Pinch of green cardamom
Few saffron strands
Also you can use Kesar syrup which you can get easily in any super market.
Preparation:-
1.In a saucepan heat milk. And bring it boil.
2. Add condensed milk and stir it constantly. Reduce it to one litre.
3.soak saffron in a tablespoon of warm milk.
4. Now crush toasted almonds along with soaked saffron in a mixer pot. Coarsely grind it.
5.Add the above almonds and saffron mix in the reduced milk and simmer it.
6.Add a little cardamom powder.( You can even add nutmeg powder) and mix.
7.Allow the milk to cool. And pour it in the matka. You can even pour it in kulfi moulds, seal them properly (airtight).
8.Freeze them in refrigerator.
Tip:-While serving drizzle a little saffron syrup
And add little chopped pistachio and almonds.
