Tri Color Pulao [Hara chana-Pudina and Carrot-Tomato Saffron Pulao]



Republic Day a very important day when the Indian Constitution was formed is observed on 26th January every year. It is a very special occasion for democracy. But late there is a trend to celebrate it by making some tri color recipes. These recipes gives us a splendid visual treat. Here is a Republic Day special Rice dish. This is a Hara Chana- Mint and Caroot- Tomato Pulao.

So to give green color to the rice we are using 3 greens available in my refrigerator.

I have Green Gram i.e. Hara Chana, Meethi, Mint and Capsicum. You can replace these ingredients with Peas, Spinach, Green Beans and coriander. This will give a nice Green color to the rice.

And for Saffron color. I am using Carrot, Tomato and Saffron. You can even use pumpkin, Red Pepper and saffron. It will give color and a lovely aroma to the rice.

This Tri color rice requires minimal ingredients. So let’s start preparing.

For Hara chana- mint Pulao (Green Pulao)

Ingredients:- For Hara chana- mint Pulao (Green Pulao)

1 cups Basmati Rice

2 tbsp oil/ghee

1 onion, chopped

1 capsicum, chopped

¼ cup Fenugreek, chopped (You can dry meethi also)

½ cup Hara chana

2 green chillies, grounded (make paste)

1 tablespoon Cumin

1 tsp Chana Masala

½ tsp red chili powder

1 tsp coriander powder

¼ cup yoghurt

2 tsp salt

1 tsp garam masala

1 tbsp ginger garlic paste

 

 Method:-

Wash and rinse rice. And Parboil (kind of 70% cooked) the rice, strain it and keep it aside.  Keep about ¼ cup rice separately to give white color.

Heat oil in a pan, add cumin, ginger garlic paste, onions and sauté it till the onions becomes brown.

Now add capsicum and hara chana, mix everything well.

Add all the dry spice powders (masala’s) and yoghurt. Mix it well.

Add little water say about ½ a cup, cover it with lid and allow the hara chana to cook properly on a flame.

Chana takes about 10 minutes to get cooked properly. Remove the lid and mix everything properly. You will see that water get’s evaporated.

Do not allow the chana masala to get dry. It should be like gravy.

Time to add the parboiled rice and salt.

Mix it and again cover it with lid and allow it to steam for 10-15 minutes on very low flame.

[* to avoid time you can transfer this rice to a microsafe plate and steam it for 4-5 minutes].

 And Green Pulao is Ready.

 

Now for Saffron Rice.

 

Ingredients:-

 

1 cup Basmati Rice

2 tbsp oil/ghee

1 tbsp cumin

½ cup carrot, chopped/grated

½ cup tomato, chopped

1 tsp Kashmiri chili powder

1 tsp Pav Bhaji Masala

1 tsp garam masala

2 tsp salt

7-8 saffron strands (you can use saffron syrup also)

Pinch of turmeric

 

 

Method:-

Wash and rinse rice properly. Now parboil it strain it and keep it aside. (rice should be cooked almost 70%)

Heat oil/ghee in a pan add cumin allow it to crackle then add carrot and tomatoes and sauté it.

Add little water almost ¼ cup and then add all the dry spice powders (Masala’s) and mix everything well.

Now add salt and saffron and allow it to cook for 2 minutes.

Add parboiled rice, mix it and steam it for 10 minutes.

Carrot-Tomato Rice is ready.

 

Now to assemble Tri Color Pulao, take a transparent pot/vessel/dish. At the bottom place some Green Pulao, then plain white cooked rice and at the top place some Saffron rice and drizzle some ghee over it.

Tri color Pulao is ready to serve.

So take out these color veggies from refrigerator and  start preparing this flavorful rice.
