Food memories are the
most strongest memories. You can never rub them off. Those mealtime memories
feel so nostalgic. There are so many things we look at, tie us back to our
past. May it be soaked Almonds, mangoes dipped in water, dollop of butter
over Paratha's, grandmas Tamarind-Jaggery lollipop or even rolls made from
Chapati, sugar and ghee, that amazing green chutney freshly grinded with the
help of pestle and mortar or even a dough. Whenever mama would make dough
for Chapati's, she would save some dough to play with when we were small. And
also relishing raw mango (kairi), gooseberries (amla), Wild Asparagus Berries,
Kabeet chutney, dried small Indian Jujube (Ber), mulberry (shahtoot) with salt
over it. During summers almost every terrace was occupied to make sun
dried stuffs- potato chips, flakes, Jowar Papad, Wheat papad, Moong Vadi etc. It used
be an event-grandma, mama, aunt every lady in house used to gather to prepare
pickles and sun dried stuffs. Pickles were stored in those typical white
brown ceramic jars covered with white muslin cloth. Now we rarely get to
see those ceramic jars.
Such incredible
food memories are the classics-makes us feel powerful, take us back to our
culture, our past. Likewise there are few recipes which will take you back to
your childhood. Once such recipe is- "Ubje"- A traditional broken
rice recipe from Maharashtra. We certainly miss those days, that taste so let's re-create our mealtime memories
again.
Wear your aprons! And
follow these simple steps to make this amazing dish.
Ingredients-
1 cup broken rice
(chawal tukda/ you can even crush rice in mixer pot)
1/4 cup split bengal
gram (chana dal)
1/4 cup raw peanuts
1/4 cup coconut sliced
2 Tablespoon Ghee/Oil
1 teaspoon mustard seeds
1 teaspoon cumin
1 onion finely chopped
1/2 teaspoon turmeric
7-8 curry leaves
1 teaspoon red chili
powder
1 teaspoon sugar
salt to taste
1tablespoon lemon juice.
Chopped coriander for
garnishing.
Method-
1. Soak broken rice for
2-3 hours.
2. Separately soak Split
bengal gram, peanuts and coconut for 2-3 hours.
3. Heat oil/ghee in a
pressure cooker, add mustard seeds and cumin, allow it to crackle.
4. Add curry leaves and
onions. Sauté it till onions are cooked properly.
5. Now add soaked Split
bengal gram, peanuts and coconut. Fry it for 2-3 minutes.
6. Add soaked rice and
again fry it for 2-3 minutes.
7. Now add turmeric, red
chili powder, sugar and salt. Mix it well.
8. Add 2 cups boiling
water to it.
9. Mix everything well
and pressure cook it till 4-5 whistle on low flame.
10. Remove it from
flame, allow it to cool.
11. Serve with load of
ghee and garnish it with coriander/grated coconut.
